The Dolphin Restaurant, Poole Hospital

The Brief

Victor first met with Poole Hospital back in 2017 to discuss an update to the existing servery area that was outdated and had not been renewed since the 90’s. A slight update was designed, but ultimately the project was postponed.

Following the merger of The Poole and Bournemouth Hospitals into one Trust, the Bournemouth Catering Manager, Andy Whittingham, took Poole under his wing. Andy had a more radical and updated design in mind.

The goal was to develop a layout which delivered a better operational workflow for both hospital staff and visitors.

The space was transformed over 21 days during the summer lockdown of 2021. Working with builders and other contractors on site, the project included updating and replacing walls and flooring.

The Equipment

To create a modern, vibrate and institutional look, we used bright white Corian worktops with white laminate fronts complimented with burnt orange accent recesses.

The project was divided into several areas:

Deli/Sandwich Area

  • Evolution refrigeration unit
  • Deli unit – for freshly made sandwiches
  • Evolution Plus Grab and Go multi-tier unit

Salad Bar – Large Centre Island

  • Walk around Victor salad bar

Main Hot Counter

  • Plate Warmer
  • 2 x 5 GN Wet/Dry Bain Marie units with contemporary square armed heated gantries
  • 2 x 5 GN Heated glass Ceran units with contemporary square armed heated gantries
  • All with Hot cupboards below
  • Stainless steel back bar for prep, microwaves and potato ovens

Shelf Service Coffee Area

  • Two coffee station with storage under for filters
  • Storage under for bins
  • Central slate wall for shelving for cups and snacks

Till/Condiment Section

  • Double till area with storage under
  • With large condiment and cutlery area behind

Throughout the servery area there are large wooden snack and grab shelving/basket units.

The Result

The servery now looks bright and inviting with many more staff and visitors able to use the Dolphin restaurant. It provides a spacious dining lounge with the ability to service more patrons wanting to sit in for a meal, or simple Grab & Go.

Part of the University Hospitals Dorset and employing over 3,700 people, this extensive installation was carried out by our own specialist in-house team in 2021.
